No Mayo Potato Salad

Port Marinade for Red Meat

Many marinades seem to use soy sauce, worcestershire sauce or fish sauce—all high sources of sodium. We developed this marinade when we started to reduce our sodium intake.

Marinade for Kangaroo

Kangaroo is one of the leanest of red meats. However, it does tend to dry out when cooked. Information on cooking kangaroo and more recipes are available from the Kangaroo Industry Association of Australia Web site.

I think of this as a Summer recipe—the perfect accompaniment to cold salads.

Honey-Soy Marinade for Red Meat

One of Mother's much-loved barbecue marinades. Any leftover meat can be eaten the following day—it gives the marinade more time to soak into the meat and makes it taste even better.
