Hubby is not a big fan of mayonnaise, a common ingredient in potato salad and one that can make the salad fattening. This is a lighter version without the mayonnaise.

Ingredients
- 500g potatoes
- 2 tsp wholegrain mustard
- 2-3 tsp fresh chopped dill or 1-2 tsp dried dill
- Pinch of seasoned pepper
- Squeeze of lemon juice
Method
- Peel potatoes and cut them into small cubes.
- Place in a saucepan with enough water to cover.
- Bring to boil and then reduce heat and simmer until firm but cooked (approximately 10 minutes).
- Add wholegrain mustard, dill, pepper and lemon juice. Mix.
Serve hot or cold.
Tip
To let the flavours soak in, make the salad the night before.
