No Mayo Potato Salad

View larger photo of no mayo potato saladHubby is not a big fan of mayonnaise, a common ingredient in potato salad and one that can make the salad fattening. This is a lighter version without the mayonnaise.

Serves 4

Preparation:
10 minutes

Cooking:
10 minutes

Ingredients

  • 500g potatoes
  • 2 tsp wholegrain mustard
  • 2-3 tsp fresh chopped dill or 1-2 tsp dried dill
  • Pinch of seasoned pepper
  • Squeeze of lemon juice

Method

  1. Peel potatoes and cut them into small cubes.
  2. Place in a saucepan with enough water to cover.
  3. Bring to boil and then reduce heat and simmer until firm but cooked (approximately 10 minutes).
  4. Add wholegrain mustard, dill, pepper and lemon juice. Mix.

Serve hot or cold.

Tip

To let the flavours soak in, make the salad the night before.
