Turkey Patties with Apple Sauce

Hubby and I are currently on holidays and staying in a serviced apartment. Being away from home means adjusting my cooking style a little—I'm using fresher ingredients (none of these packaged herbs, spices and condiments) and fewer ingredients. These patties were simple to make and so delicious—we had two for our dinner and two were put away for another meal!

Ingredients

Patties:

  • 500g minced turkey
  • 3 cloves of garlic, crushed and finely chopped
  • Small onion, finely diced
  • Half a red chilli, deseeded and finely diced
    For more bite, try 1-2 birds eye chillies
  • 1-2 tsp mustard seeds (the only pre-packaged spice we bought)

Apple sauce

  • 2 medium apples, peeled, cored, and diced
  • Juice of quarter a lemon (about ½ tbs)
  • Sugar (taken from the complimentary tea-making supplies)
  • 1-2 tsp mustard seeds

Method

Patties:

  1. Mix the turkey mince, onion, chilli, garlic, and mustard seeds together.
  2. Divide the mixture into four and create four patties about 1-2 cm thick.
  3. Place them on a plate in the refrigerator for about 5 minutes to let them bind.
  4. Cook in a frying pan over a medium heat for 15-20 minutes, turning them over about halfway through.

For the sauce:

  1. Place water in a small saucepan, just enough to cover the bottom of the saucepan.
  2. Add the apple, lemon juice, and enough sugar to taste.
  3. Cover and cook on low heat until apple is tender.
    Continually check that there is enough liquid and the apple does not get burnt or stuck to the bottom of the saucepan.
  4. Stir through mustard seeds and then remove from heat.

Serve patties with potatoes and salad or steamed vegetables. Top the patties with the apple sauce.

Tip

To speed up the cooking of the apple sauce, I cooked the apples on a high heat without covering them, stirring constantly to stop them from burning. When the apples started to become tender, I used a potato masher and then a fork to create the consistency I wanted for the sauce.
