If you don't like pastry on your quiches then this recipe is for you.

Ingredients
- 1½ cups milk (or ¾ cup milk and ¾ cup cream)
- ½ cup self-raising flour
- 3 eggs
- ¼ cup melted butter
- Salt and pepper
- 1 cup grated cheese
- ½ cup cooked bacon
- Shallots or parsley, finely cut
Method
- Place milk, flour, eggs and melted butter in a bowl and whisk.
- Season to taste with salt or pepper or both.
- Add cheese, bacon and shallots.
- Mix the contents and then pour them into a quiche dish.
- Cook in the oven for 30-40 minutes at 180°C.
Serve with a salad.
Tips
- Consider other fillings such as onions, tomatoes, ham or canned fish as substitutes for—or as additions to—the cheese, bacon and shallots.
- If you have too much filling, the quiche takes longer to cook.
Sister's tip: Peel and grate a potato into the mixture to bind the quiche. - To stop the quiche collapsing in the middle, let it stand in the warm oven with the door open until you are ready to serve it.
- Pour into muffin tins to make snack-size quiches.
If you like some pastry, line the muffin tins with filo pastry before pouring in the quiche mixture.
For a vegetarian version:
- This recipe is great for using up leftover vegetables. Try tomatoes, broccoli, mushrooms, onions and potatoes and remove the bacon.
- If you prefer, you can substitute soy milk and soy cheese for regular milk and regular cheese.
