Greek-Style Salad

My brother tells me that this is not a true Greek salad, hence the Greek-style in the name. As he's visited Greece and sampled the food there, I guess he would know. * wink *

Serves 4

Ingredients

  • Approximately 4 cups of mixed salad leaves, for example english spinach, rocket, tsatoi
  • Punnet of cherry tomatoes
  • Reduced-fat feta cheese cut into small cubes
  • 2 Tbs sliced kalamata olives
  • Balsamic vinegar
  • Virgin olive oil

Method

Mix all ingredients in a bowl.
Serve with balsamic vinegar and olive oil on the side.

Notes

  • Brother's info: For a more ‘authentic’ Greek salad, replace the salad leaves with spanish onion and cucumber.
  • Substitute low-fat cottage cheese for the feta cheese to reduce the kilojoules, fat and sodium content.
