Smoked Oyster Dip

As far as I know this dip was created by my mother. For a long time it was the only dip we kids would eat!

Times

Preparation:
20 minutes

Ingredients

  • 1 small tub or block of cream cheese (approximately 240g)
  • 2 cans of smoked oysters (approximately 220g)
  • 2 Tbs diced bread and butter cucumbers, gherkins or dill cucumbers
  • 2 Tbs diced pickled onions
  • 2 Tbs fruit chutney
    If you cannot find fruit chutney, try a mango or peach chutney.

Method

  1. Place cream cheese in a bowl.
  2. Drain the oil from the oysters and add them to the cream cheese.
  3. Use a fork to mash the oysters with the cream cheese.
  4. Add the bread and butter cucumbers and pickled onions.
  5. Add chutney (to taste).
    The official family instruction is “add chutney until you just lose the cheesy taste”.
  6. Mix all the ingredients thoroughly.

Serve with water crackers or vegetable crudites.

Tips

Substitute cottage cheese for cream cheese to reduce the calories and amount of saturated fat.
