Guacamole

Guacamole is a Mexican avocado dip. This recipe was developed by a friend. You can vary the quantities of all the ingredients to suit your tastes. The recipe here does not include tomatoes or onions, which are usually part of a traditional guacamole.

Ingredients

  • 1 ripe avocado, peeled and seeded
  • 2-3 cloves of garlic, pressed or grated
    If you don't have fresh garlic, use garlic powder.
  • Squeeze of lemon juice
  • Pepper

Method

  1. Mash the avocado in a bowl.
  2. Mix in the garlic.
    Vary the amount of garlic to suit your tastes.
  3. Add lemon juice, a little at a time.
    Be careful - too much lemon juice will make the guacamole sour and this is difficult to correct if you do not have any more avocadoes.
  4. Add pepper to taste.
    The pepper softens the taste of the garlic and adds a little heat.

Notes

This is a versatile dish. Serve guacamole as a:

  • Side dish or entree.
    Provide corn chips or water crackers for dipping, or try brie and guacamole on water crackers.
  • Filling for Mexican recipes such as tacos or burritos.
  • Spread for sandwiches - try it with barbecue chicken.
